Easter Weekend Recap
I had a great, busy, and fun Easter weekend. Friday, at work, we had our annual Spring Fling. The university staff members come together to eat lunch and play games.
Friday night, I attended a paint class that was a fundraiser for our church. I really love the painting and look forward to many more.
Saturday, I actually had to come into work for a few hours, but when I got home I cooked a few things for Easter lunch. I also made an Easter craft. I love the way this turned out and I wish I had made it earlier in the season.
Sunday morning, I went to church and some friends came with me. I was so excited about that. After church, I loaded up my broccoli salad and lemon bars and headed to TC's aunt's house for Easter lunch. We also had an Easter Egg hunt for the kids.
I left from there and ate Easter dinner with my parents. It was a fun, but exhausting, weekend...which may be why I am just now getting around to blogging about it. I hope everyone else had a great Easter weekend!

Easter 2011
When the Sabbath was over, Mary Magdalene, Mary the mother of James, and Salome bought spices so that they might go to anoint Jesus' body. Very early on the first day of the week, just after sunrise, they were on their way to the tomb and they asked each other, "Who will roll the stone away from the entrance of the tomb?"
But when they looked up, they saw that the stone, which was very large, had been rolled away. As they entered the tomb, they saw a young man dressed in a white robe sitting on the right side, and they were alarmed.
"Don't be alarmed," he said. "You are looking for Jesus the Nazarene, who was crucified. He has risen! He is not here. See the place where they laid him. But go, tell his disciples and Peter, 'He is going ahead of you into Galilee. There you will see him, just as he told you.' "
Trembling and bewildered, the women went out and fled from the tomb. They said nothing to anyone, because they were afraid.

A-Day Adventures
Saturday morning, my MIL, Deb, and I headed to Tuscaloosa to meet TC and his daddy to watch the A-Day game. There were so many people there. About 92,000. That's a lot for the spring scrimmage game, I think. The university also unveiled the new Nick Saban statue. It's a little weired. I think its because his hands seem too big. Anyway, we had so much fun.
I hope everyone had as good a weekend as we did!!

Things I Learned This Weekend
- Zumba still hurts, even after your second visit.
- According to WSFA, retail therapy can prolong your life. I added 8.62 years to my life this weekend.
- I would rather sweat to death in my house than turn on the AC. I like to see how far I can go without turning it on. Last year, I made it to mid-May and I hope I can make it that far again this year.
- Dollar Tree really does charge a dollar for everything. Duh. Even to get cash back from your debit card. Thanks, but no thanks.
- My fingernails will break and split if I don't keep them polished.
- The people at caloriecount.com are my friends. Even though they told me it would take me until January 12, 2012 to reach my goal.

Cravings
For the past week, I have had a craving for a pineapple and cheese casserole. I bought all the ingredients this weekend and made it last night. Yum-o!! I know some of you might be thinking "gross" but just try it. You'll thank me later. It is the perfect balance of sweet and salty (and cheesy - can't forget the cheese)! I thought I would share the recipe with you.
Ingredients:
3 (15 ounce) cans pineapple tidbits
2 1/2 cups shredded cheddar cheese
8 tablespoons pineapple juice
8 tablespoons all purpose flour
1 cup white sugar
30 Ritz crackers, crushed
1/2 cup butter, melted
Directions:
Preheat oven to 350 degrees F.
In a large bowl combine pineapple tidbits, cheese, pineapple juice, flour and sugar.

Spoon into a 9x13 inch baking dish.
Top with crushed crackers and melted butter.
Bake in preheated oven for 30 minutes.

Blinders
Hello dear blog friends. Sorry to neglect you all week, but I figure you don't really want to hear about how I get up, go to work, go to bed, wash, rinse, and repeat. I think a casual Friday post deserves a bullet list:
Much like last weekend, this weekend I hope to go to some yard sales, Zumba ( I MUST be crazy), and maybe, just maybe, do some crafting. What are your plans for the weekend?

- I've got my blinders on today because I may be the only person on the face of the earth that did not watch Grey's Anatomy: The Musical Event last night. I don't want to know anything about it yet.
- On a related note, my plans for tonight include cleaning out the old DVR and catching up on shows that I missed all last week, including Tuesday night's season finale of Teen Mom 2, Grey's, and Private Practice.
- Tuesday I attended my first Girls Night Out with the girls from my Sunday School Class. So much fun!! I think it is important, but hard, to have friends as an adult. At least it was hard for me. I was so busy working all day and going to school all night (it seemed), that I would have never had time to do something like a Girls Night Out on a Tuesday. I am so thankful that these women are so willing to open up their homes to all of us. I am already looking forward to next month's Girls Night Out!
- When I
finallygot up this morning, Penelope the cat decided that my bed looked much more comfortable than hers. She normally wants to go outside when she gets good and awake in the mornings, but not this morning. I started looking for her since she normally follows me around like a shadow, but this morning she was nowhere to be found. I finally found her curled up in my spot.
